Easter Cupcakes

Happy Easter! This is a simple cupcake recipe I made with my sister (hi Emma), with a festive little decoration. This is how we did it…

To make the cupcakes you will need:
2 1/3 cups plain flour
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1 cup butter, softened
1 1/4 cups caster sugar
3 eggs
1 teaspoon vanilla
2/3 cup milk

Directions // Preheat the oven to 350 degrees F. Line 24 cupcake tins with paper liners. Combine the dry ingredients in a bowl. Set aside. In a mixer, cream butter and sugar for 2-3 minutes. Beat in the eggs and vanilla. Mix in half of the flour mixture, then all of the milk, then the remaining flour mixture until combined.

To make the buttercream frosting you will need:
3 cups of powdered sugar
1 stick of butter
Dash of milk
1 teaspoon vanilla
Buttercream directions

Optional:
Green food coloring
Shredded coconut
Cadbury eggs

Directions // Cream butter for one minute then sift icing sugar into butter. If dry, add dash of milk. Add vanilla and combine mixture for three minutes to get a fluffy buttercream.

If desired, embellish the cooled cupcakes with coconut mixed with a few drops of food coloring and Cadbury eggs.
